Albert Kirchmayr is a chocolatier in the true European tradition, using methods that run counter to the technology dominating the industry. A native of Germany who studied the culinary arts and became a chef at a hotel in Bermuda, Kirchmayr eventually returned to Europe and to learn candy making at schools in Munich and in Switzerland. He arrived in Baltimore eight years ago, setting up shop at 6223 North Charles St. with equipment he brought with him from Germany. Kirchmayr’s reputation as the region’s preeminent candy maker has blossomed over the years, earning him a fanatic following of discerning consumers.

His is a business built on personal associations and loyal customers, so loyal that when $20,000 in checks was stolen from Kirchmayr’s car during a recent Christmas season, half of the people who wrote checks and read about the incident in The Sun sent duplicate checks to the shop. Customers come to Kirchmayr’s for European-style confections --- 15 varieties of chocolates, smooth nougats, exotic marzipan concoctions, liqueur-laced truffles. For Valentine’s Day, Kirchmayr crafts a chocolate heart base wrapped in red foil, filled with candy and then covered with cellophane to display the delectable contents. The look is priceless.
